Trinidad Express / WHEN you think of the word “dietitian”, does the image of a glorified cook come to mind? Think again. The reality is that as professionals who understand the importance of food and the science of food, dietitians and nutritionists play a crucial role in the health sector. Their job is multifaceted and also combines biochemistry and psychology. Nicole Alexander should know. She’s a registered consultant dietitian who has worked in the field for more than 20 years. She has always paid more than the usual attention to food, since cooking at home was a family tradition, Alexander herself learned how to knead dough at the age of ten. She was just 14 and a pupil at St George’s College when a programme on CNN convinced her to pursue a career in nutrition and dietetics. “I love food, but the programme spoke about the science of food and that was what caught my eye,” she says.
